Weekday Instapot Lasagna



Lasagna in 30 mins (well 60 with prep and broiling ) WHAT?!!? The instapot was made for busy moms! I used all the convenient grocery store hacks, pre-made sauce, pre shredded cheese and this comes to together so quick.


This is the perfect after work, in a hurry meal that the whole family will love, and even picky kids will eat.






Ingredients:

1 pound Italian sausage, casings removed 

2 cups ricotta 

1 large egg 

1 tablespoon fresh or dried oregano 

3 cloves of chopped garlic 

Kosher salt

Oven-ready lasagna noodles (8-10)

Nonstick cooking spray, for the pan 

1 Jar marinara sauce, I prefer Rao's Homemade Marinara

12 ounces shredded "pizza" mix cheese (mozzarella, provolone and Asiago) OR plain shredded mozzarella

4 tablespoons grated Parmesan

2 tablespoon of fresh parsley



Directions

  1. Set a 8-quart Instant Pot® to Saute. Spray the inside pan and wait until it gets hot. Add the sausage and cook, breaking up clumps with a wooden spoon until brown.

  2. Remove sausage transfer to a bowl lined with a paper towel to help drain the extra fat. Add a splash of water and scrape up the brown bits, then discard. Wipe down the inside of the pot.

  3. Stir together the ricotta, egg, oregano, garlic, a bit of chopped parsley and 1/4 teaspoon salt.

  4. Break the noodles to fit into pan (it's okay if little shards break off too).

  5. Spray a 9-inch round spring form cake pan with nonstick spray.

  6. Spread a little bit of sauce in the bottom of the pan, then top it with a layer of broken lasagna noodles so that they slightly overlap and cover most of the pan. Top with a about a third of the ricotta mixture and about a third of the mozzarella, then a sprinkle of Parmesan. Sprinkle a third of the sausage over the cheeses, then drizzle with marinara sauce. Repeat 2 more times. Top with one last layer of noodles, a thin layer of the remaining marinara, and then the mozzarella. Sprinkle with Parmesan.

  7. Cover the outside bottom of the pan with foil to avoid sauce leaking out.

  8. Place the trivet in the bottom of the Instant Pot® and add 1 cup water. Set the lasagna on the trivet, then cover the pot. Set the pot to Pressure Cook on high and set for 30 minutes. Manually release the valve when it is done.

  9. Preheat the broiler.

  10. Carefully remove the lasagna from the pot. Carefully remove foil from bottom. There is often liquid trapped in the foil

  11. Broil the lasagna in until bubbling and browned in spots, about 2 minutes. Let stand for 20 minutes release from pan and serve.
