Veggie Fritters



Best way to trick your kids into eating veggies...fry them ;-)

All kidding aside this is a household favorite and a great way to use up the extra steamed broccoli from the the night before.


Ingredients:

  • 1 cup AP Flour

  • 1 teaspoon baking powder

  • 1 pinch of salt

  • few grinds of pepper

  • 2 eggs

  • 1/2 cup of milk

  • 1 cup of grated carrots

  • 1 cup of chopped steamed broccoli

  • 1 cup of grated zucchini

  • 1 cup of steamed peas

  • 5 sliced green onions

  • oil for frying








Directions:


  1. Combine all the dry ingredients, flour, baking powder, salt and pepper in a bowl.

  2. In another bowl beat eggs and milk together. Add carrots, peas, broccoli, zucchini and green onions .

  3. Heat oil

  4. Using an ice cream scoop carefully drop into oil. Flatten with the back of a spatula

  5. cook for 2-3 mins per side, until nice and golden brown.

  6. Sprinkle fritter with salt while oil is still hot.
