Best way to trick your kids into eating veggies...fry them ;-)
All kidding aside this is a household favorite and a great way to use up the extra steamed broccoli from the the night before.
Ingredients:
1 cup AP Flour
1 teaspoon baking powder
1 pinch of salt
few grinds of pepper
2 eggs
1/2 cup of milk
1 cup of grated carrots
1 cup of chopped steamed broccoli
1 cup of grated zucchini
1 cup of steamed peas
5 sliced green onions
oil for frying
Directions:
Combine all the dry ingredients, flour, baking powder, salt and pepper in a bowl.
In another bowl beat eggs and milk together. Add carrots, peas, broccoli, zucchini and green onions .
Heat oil
Using an ice cream scoop carefully drop into oil. Flatten with the back of a spatula
cook for 2-3 mins per side, until nice and golden brown.
Sprinkle fritter with salt while oil is still hot.
