Trader Joe's Breakfast Rice

As a busy mom, I'm always looking for fast breakfast options that aren't full of sugar. I love this recipe because not only is it fast but it's easy to scale depending on the size of the crowd I'm feeding. AND it's all made in one pot (or Wok in this case)...who wants to start the day with the sink full of dirty dishes.

Ingredients:

  • 2 Bags of Trader Joe's Japanese Style Fried Rice

  • 1lb of bacon

  • 6-8 eggs

  • 4-6 green onions, chopped. White and green parts.

Directions:

  1. Heat the Wok (or large pan) over high heat

  2. Chop the bacon into half inch pieces.

  3. Fry bacon pieces. until crunchy push to side of the pan.

  4. Crack eggs directly into the pan. Scramble in pan as they cook. It ok if some of the bacon gets in the eggs.

  5. Add the two bags of frozen rice. Mix until the rice is heated through.

  6. Sprinkle in the chopped green onions

  7. Enjoy!


Hints:

  • Trader Joe's offers a very varieties of Fried Rice, I really prefer this variety over the others.

  • You can easily swap out the bacon with left over chicken or steak for a quick dinner or lunch.

  • Try and keep the eggs in larger pieces as they break up as they get mixed into the rice mixture.

  • You don'd need a wok, I just prefer it to hold this volume of rice.

  • This recipe feeds my family of four, plus "uncle" who regularly joins us for breakfast. But it would be easy to scale up or down depending on on the size of your crowd.

  • Left overs are just as good. And awesome to have on hand as a super quick meal to heat up on the go.
