This was always my favorite dinner growing up. It was often a request on birthdays and special occasions. It used to be a bit more time consuming but with some of the modern conveniences the grocery store now offers like rotisserie chickens and pre-shredded cheese it actually comes together really quickly now.
Ingredients:
8 Burrito size flour tortillas
1 whole rotisserie chicken shredded
1/2 cup sour cream
1/4 cup mayonnaise
2 16oz cans of refried beans
7oz can of diced mild green chilies
5 green onions, chopped white and green parts
1 32oz bag of Mexican Blend Shredded cheese (I don't use the whole bag...but I also don't measure out the cheese, sorry)
1 can of sliced black olives
Oil for frying
a little salt to season
Cilantro, optional topping
Avocado, optional topping
Green Chile Sauce, optional topping
Directions:
Preheat oven to 350
Heat a tablespoon or so of oil in a pan.
Fry tortillas,adding oil when needed
Let tortilla cool between paper towel
While tortilla are cooling, add the shredded chicken, sour cream, mayonnaise, chopped green onions, diced green chiles and a pitch of salt in a large bowl. Mix until well combined. Set aside
On a large baking sheet put one tortilla in the middle of the baking sheet.
Top the tortilla with an even layer of refried beans almost to the edge but not quite. Place another tortilla on top and apply a bit of pressure. Cover this tortilla with a even layer of shredded cheese and top with another tortilla again applying a bit of pressure with every tortilla. Next layer is the chicken mixture, cover the tortilla with an even layer of the chicken mixture and top with another tortilla. Following layer is beans, cheese and a few black olives, top with another tortilla. Repeat in no particular order until all the tortilla have been used.
Bake for 30 mins
9. Pull out of the oven and cover the top tortilla with a generous layer of shredded cheese and sprinkling of black olives. Bake for another 10 mins or until the cheese is melted.
10. Let cool for 10 mins before slicing
11. Cut a slice for serving and top with avocado, cilantro and hot sauce if you want a little heat.
