This salsa is the perfect balance of sweet and savory. It's great plain with some good quality chips but it if your feeling "extra" try using it to top prawn or fish tacos, you won't be disappointed.
Ingredients:
3 ripe nectarines
1 plum tomato, seeded and roughly chopped
1/2 jalapeno, seeds removed and roughly chopped
1/2 small purple onion, roughly chopped
1/4 cup cilantro roughly chopped
1 lime, juiced
salt and pepper to taste
Garnish: additional cilantro
Hints:
You can definitely use peaches instead of nectarines in this recipe. I just happen to like the firmness of the nectarines and the texture of their skin better then peaches.
