This soft and chewy sugar cookie has just the perfect hint of bright lemon flavor. Easy to make and big on flavor!
Ingredients:
2 sticks salted butter, at room temperature
1 1/2 cups sugar
3 tablespoons lemon zest
2 tablespoons lemon juice
1 large egg
3 cups flour
1 teaspoons baking soda
pitch of salt
1/2 cup sugar to roll the dough in
Directions:
Cream together butter, sugar and lemon zest using an electric mixer with the paddle attachment.
Add lemon juice and egg. Beat until combined
Slowly add in flour, baking soda and salt. Don't over mix
Cover bowl and refrigerate for an hour.
Preheat oven to 350
Using a cookie scoop, scoop out 1.5" balls and roll in sugar.
Place the cookies about 2 inches apart on a baking sheet lined with parchment paper.
Bake for 11-16 Mins. until they have just the slightly amount of golden color on the edges. DON'T OVER BAKE
After removing cookies from the oven. You'll find they have "puffed" a bit in the middle. Tap the top of each with the bottom of your spatula to deflate them. This will help with the "chew" factor.
Let cookies cool on the trays for about 2 mins before transferring them to either a cookie racks, or my preference sheets of Kraft paper or brown grocery bags.
