Mexican Pizza

This an adaptation of a recipe I got on a weight loss program, but don't let that scare you! This is a favorite in my house with my family, friends and even my favorite UPS driver, Yvette. It makes a lot, which is great, because I cut it into forth and wrap them in foil an freeze. For a handy, quick, delicious meal any time.



INGREDIENTS:

  • One package (two shells) of thin pizza crust, like Mama Mary's Thins or Whole Foods 365

  • 16oz can of refried beans

  • 3 packets of taco seasoning

  • 8oz fat free or low fat sour cream

  • 2lb ground turkey, chicken or beef. Your Choice, I usually go with ground turkey.

  • 7oz can of roasted diced green chilies

  • 2 8oz bags of shredded Mexican cheese mix. Or pepper jack is great too.

  • Diced cherry tomatoes

  • 1 bunch of cilantro

  • 4 chopped green onions

  • 1/4 cup chopped red onion

  • Option topping: Avocado


DIRECTIONS:

  1. Preheat oven to 400

  2. Heat refried beans in a medium sauce pan.

  3. Once the beans begin to soften and it's easier to stir, add ONE packet of taco seasoning, the can of green chilies, and the sour cream. Mix until well combined. Remove from heat and set aside.

  4. In a large skillet brown the ground meat. Add the remain taco seasoning packets and follow directions on packet.

  5. When most of the liquid is evaporated add the raised and drained black beans. Remove from heat and set aside.

  6. Place each crust on it's own baking sheet.

  7. Divide the refried beans in half and spread evenly over each crust.

  8. Divide the meat bean mixture evenly and top the refried bean layer with it.

  9. Top each crust with a bag of shredded cheese

  10. Then top each pizza with a even sprinkling of red onion, green onion, cilantro, and diced tomatoes.

  11. Place in oven for about 12-15 mins. Until the cheese is melted and slight bubbly.

  12. Top with portion with avocado and dollop of sour cream.
