Frosted Sugar Cookies

Ingredients:

2 1/2 cup AP Flour
1/2 teaspoon salt
12 tablespoons of soft salted butter
1 cup sugar
1 egg
1 1/2 teaspoon vanilla extract
Directions:
It's important that every starts at room temperature.
In a small bowl sift together flour, and salt.
With an electric mixer with the flat beater attachment, beat butter on high until creamy about 2 mins.
Reduce speed slowly add sugar beat until its light and fluffy, scraping down sides when needed.
Add egg and vanilla.
Stop mixer and add half the flour, beat slowly add the rest of flour until the dough pulls away from the bowl.
Shape dough into disk, wrap in plastic and refrigerate for 2 hours.
Remove dough from fridge and let stand for 5mins.
Preheat oven to 350
Roll out on a lightly floured surface, roll dough to 1/4" thick
Use cookie cutters to cut shapes.
Place cookies on parchment paper covered baking sheets
Bake until edges are brown. 11-13 mins
Transfer to cooling rack.
COOKIES MUST BE TOTALLY COOL BEFORE FROSTING
Royal Icing
Should make about 5 cups

Ingredients:
3 egg white at room temperature
4 1/2 cups powered sugar
1/2 teaspoon of cream of tarter
Few drops of Vanilla extract
Food Coloring
add water by the drops if needed to adjust texture.
Directions:
Use an electric mixer with the whisk attachment, beat egg whites, sugar, cream of tarter until blended.
Add food vanilla and increase speed
Beat until stiff peaks form and mixture has nearly tripled in size.
Divide into bowls for desired colors. Add food coloring.
Cover with plastic wrap until ready to use, up to six hours
TAKE YOUR TIME, to frost.
