Copy Cat Thin Mints

Go out and make a donation to your local girl scout troop then rush home to make these homemade thin mint treats!

Not only are these delicious but they are pretty quick to put together and they freeze amazing!



Ingredients:

  • 2 sticks unsalted butter, at room temperature

  • 1 cup unsweetened cocoa powder

  • 1 cup powered sugar

  • 1 teaspoon vanilla

  • ¾ teaspoon salt

  • 1 ½ cups all purpose flour


  • 2 bags (about 22oz) of good quality semi sweet chocolate chips.

  • 2-4 tsp vegetable or coconut oil

  • 1 1/2 teaspoon peppermint extract (not spearmint)



Instructions

  1. Set the oven to 350F

  2. In a electric mixer cream butter sugar until light and fluffy. Stir in the salt, vanilla and cocoa powder. Mix until the cocoa powder is integrated and the batter resembles a thick frosting. Add the flour and mix just until the flour is until combined, - This step is a little tricky because it seems like the batter is too dry, but keep mixing, like magic it will come together. Once it does STOP, don't over mix.


3. Form dough into a inch thick disk, wrap in plastic wrap then place in freezer for 15 minutes.


4. Remove dough from the freezer and roll it out really thin on a floured surface, about 1/8-inch. Cut cookies using 2-inch cutter


5. Place cookies on a baking sheet and bake for 12-14 minutes. Remove the cookies from the oven and allow them to cool completely on a wire rack.


6. While the cookies cool make the peppermint coating. Combine chocolate chips and 2 teaspoons oil in a glass bowl microwave in short 20-40 second bursts. Stir in the peppermint extract. Feel free to add in the extra 2 teaspoons of oil if the chocolate this smooth enough.


7. Gently drop the cookies, one at a time, into the coating. Turn to coat entirely, then lift the cookie out of the chocolate with the fork and bang the fork on the side of the pan until the extra coating drips off. Place on a parchment or plastic wrap-lined baking sheet, and repeat for the rest of the cookies. Place the cookies in the refrigerator or freezer to set. Or leave on counter until chocolate hardens.


I sometime will add sprinkles to one side of the cookies while they are drying for a festive twist.


Once the chocolate has completely harden throw some in the freezer...trust me.


These are great fresh...but amazing straight out of the freezer!
