Coconut Lover Granola (Gluten Free)

Kids and adults in my house go crazy for this treat. It's good enough to eat on its own or top yogurt or ice cream with.



Ingredients:

  • 1/3 cup coconut oil

  • 1/2 cup maple syrup

  • 2 Tablespoons vanilla

  • 2 Teaspoons cinnamon

  • 1 Teaspoon All Spice

  • 1 Teaspoon ground ginger (not fresh)

  • 7 oz unsweetened coconut flakes (the large flakes)

  • 7 oz sweeten shredded coconut

  • 1 cup chopped unsated raw almonds

  • 8oz Roasted + Salted Pecans (Trader Joe's are my go to)

  • 1/2 cup shelled sunflower seeds

  • 1 cup dried cranberries





Directions:

  1. Preheat oven to 325.

  2. Line a large rimmed baking sheet with parchment paper.

  3. Add coconut oil to a large microwave safe bowl.

  4. Melt coconut in microwave, about 30 seconds.

  5. Wisk maple syrup, cinnamon, all spice, ginger and vanilla into the coconut oil.

  6. Add all the dry ingredients to the coconut oil mixture. Coating the drying ingredients well.

  7. Spread mixture evenly over baking sheet.

  8. Bake for 30-35 mins until golden brown.

  9. Let cool completely before breaking into chucks and storing in an airtight container.
