Belgian Waffles!

Throw out that store bought mix! These are just as fast and easy and a thousand time better! This recipe is inspired by Wayne Harley Brachman's belgian waffles.


Ingredients:

  • 2 cups cake flour

  • 1 tablespoon baking powder

  • 1/4 teaspoon baking soda

  • 1/4 teaspoon salt

  • 1/2 cup sugar

  • 1/2 cup buttermilk (NEVER have buttermilk on hand, so I mix 1/2 cup milk + 1/2 tablespoon white vinegar to substitute.)

  • 1 cup milk

  • 1 teaspoon vanilla

  • 2 eggs

  • 1/4 cup melted unsalted butter

  • spray for coating waffle iron

  • Confectioners' sugar (optional)

  • Fresh strawberries (optional)

  • Whipped Cream (optional)


Directions:

  1. Preheat a waffle iron. In a large bowl, mix together the all dry ingredients. Make a well in the center and add the buttermilk, milk, eggs, vanilla and melted butter. Mix together just until combined, don't over mix! Lumps are your friend.

  2. Spray the waffle iron with the nonstick spray. Pour approximately 1/2 cup of the batter onto the hot waffle iron; bake as directed by the manufacturer.

  3. Finish the waffles with a light dusting of confectioners' sugar, whip cream and fresh strawberries.
